Healthy brownies???

I remember the first time my neighbor brought me a plate of these, we downed all of em in a day.  She told me when she gave them to me that they were healthy, but didn't tell me why til after we downed em...then she told me they were full of spinach and carrots!!!
Um, needless to say we make em all the time now.

3 oz swmisweet or bittersweet chocolate
1/2 C carrot puree 
1/2 C spinach puree
1/2C firmly packed brown sugar......or honey, or agave
1/4 C unsweetened cocoa powder
2T butter or coconut oil
2t vanilla
2 egg whites
3/4 C oat flour or whatever flour you have
1/2 t baking powder
1/2 t salt


To make the puree I put some carrots and spinach in the vitamix with some water and keep adding spinach until I get to 1C.
 Melt the chocolate over a double broiler (or nuke it if you are a microwave user...on low for 30 seconds at a time til it's all melted)

Mix the melsted cocolate, veggie puree, sugar or honey, cocoa powder, coconut oil and vanilla.  Wisk it until it's smooth.
Add egg white then stir in the dry stuff.

Spray an 8x8 pan, and bake the brownies for 35 minutes at 350
