Caramlized Onion Dip

Ingredients

  • 2 tablespoons unsalted butter
  • 2 medium onions, thinly sliced
  • kosher salt and black pepper
  • 1 8-ounce bar cream cheese, at room temperature
  • 1 cup sour cream
  • 2 tablespoons chopped fresh chives
  • So just slap the butter and onions in a pan, caramelize til they are a lovely brownish color, then mix everything together. They are great served with home made potatoes chips. If you have that weird pampered chef serrated chopper thingy you can make them rippley. Just slice potatoes, put em on a cookie sheet, sprinkle them with olive oil and sea salt, and bake em at 425 for a while. I forget how long, but you can just peek in every 5 minutes or so and see. They are so good with this dip.
