Sunday Morning Crepes....on Monday

We used to try and make it a tradition to have crepes every monday, then early mroning church hit...but now, we're back to 10:30, so hopefully it'll start again.  But here's our recipe that we've been making for YEARS!!!! This pic isn't the best because I forgot to take a pic til the last one was being eatten...

  • 1 1/2 cups all-purpose flour (we do half whole wheat and half white unbleached)
  • 1 tablespoon honey
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 tablespoons stick margarine or butter, melted...or coconut oil
  • 1/2 teaspoon vanilla
  • 2 large eggs
we just throw all of that in the blender, then pour it into a HOT big pan, let it cook for about a minute then flip it and let it cook again for about a minute.  It should be super super thin....about paper thin.

Then we put berries, bananas, vanilla yogurt, a cream cheese/jam mixture, or if  you're botston, peanut butter and oranges.  You can put whatever.  If we have extras we melt cheese and ham in them for lunch.
