Healthy Taco Soup

But I will tell you that if you make this once you'll be making it again! I have 8 Brothers & they ask me to make it for them weekly. That's some good soup if you ask me! This soup makes me happy just thinking about it. I get to sneak in so much "healthy food" & my kids have NO IDEA!
Get a big pot because this is gonna make you alot of soup! Plan on extra's even after your kids & hubby have 2nd's & 3rd's

drizzle with a little olive oil
dice 1 large onion
1 lb ground beef
brown & drain extra fat
add 1 bell pepper any color chopped
minced garlic
salt & pepper
2 cans chicken broth
sprinkle with a little powdered ranch & taco seasoning
2-3 cans tomamtoes.. diced, stewed.. anyway you like them
1 can diced green chilies
2 cans black bean
2 cans red kidney bean
2 cans white beans
1 bag trader joe's frozen corn

mix together & top with sour cream, cheese, green onions, chips

excellent the next day over salad for lunch!

  2. Taco Soup Verdict? It was soooo tasty! My kids inhaled it. Served it with some cornbread - and it was a hit. The awesome thing is - the recipe is BIG - which means I will not have to cook tomorrow. Might even freeze some. I also substituted fat-free greek yogurt instead of sour cream, as I need all the extra protein I can get - but can't handle the fact.
